6 oz. Mori-Nu silken style tofu, firm or extra firm
1/4 cup Soy Mayonnaise
1/4 cup green onion, finely chopped
3 T. water
4 t. lemon juice
1 T. freshly chopped parsley
1 T. freshly chopped dill
1 T. tamari, soy sauce, or Bragg Liquid Aminos
1 1/2 t. garlic, minced
salt and pepper, to taste
dash of cayenne pepper
In a blender or food processor, combine all of the ingredients, and process until smooth. Transfer to an airtight container and store in the refrigerator for up to 5 days. Use as a dressing, dip, spread, or mayonnaise substitute in your favorite recipes.
Yield: 1 3/4 cup
